Late Spring Dark and Stormy - make rhubarb syrup: 2 c. chopped rhub, 1 c. water, 2 tabs. sugar in pan, cook, med heat, covered, stirring occasionally, for 7 min or until rhub is tender, beginning to fall apart. Strain and cool. Cocktail-squeeze 1/4 lime and add shell to glass over ice, add 1 1/2 oz dk rum, 1 1/2 oz rhub syrup, 2 oz ginger beer, stir gently, add 1/4 lime

Honey Badger Cocktail 1 1/2 oz. Ransom Old Tom Gin 1 oz. Honey Syrup 3/4 oz. lemon juice Serve over ice and top off with sparkling mead or cider…Mead is the preferred choice here but cider might be a little easier to come by. We used a friend’s home made hard cider, but Farnum Hill Cider is also delicious.
Diamonds & Pearls 1 oz. Hendrick's 1 oz. Lillet Blanc 4 fresh blackberries 1/2 oz. coconut syrup Muddle blackberries with coconut syrup. Add other ingredients and shake very well. Serve up in a cocktail glass. Garnish with a blackberry.
Bear Hug 2 oz Templeton Rye 2 oz of ginger beer 1/2 oz cinnamon simple syrup (or regular simple syrup with cinnamon mixed in) Splash of lemon juice Shake all of the ingredients together and pour over ice. Add a cinnamon stick and lemon peel tuile if desired.

Basil Mint Limeade 2 c. peach vodka, 2 c. water 1 c. basil syrup , 1 c. fresh lime juice (8-10 limes) Combine all ingredients with ice in a pitcher. Garnish with lime wheels and basil leaves as desired.
Violet Beauregarde Fill a collins glass with ice, interspersing violets throughout. In a mixing glass, combine berries, syrup, and lemon juice. Muddle thoroughly. Add spirits and fill glass with ice. Shake vigorously. Add1 1/2 to 2 oz. Fever Tree bitter lemon soda to mixture. Strain mixture into prepared collins glass. Garnish with 2 blueberries, a long thin lemon twist, and a lavender sprig.
The Lavendar Ghost: 2 oz Dry Gin; 1/2 oz Lavender Syrup; 1/2 oz Lemon Juice. Combine the ingredients, shake with ice, strain into a chilled a cocktail glass.
