Cilantro Lime Rice. I have this as a side with almost every mexican dish i make, I love it that much! I usually reduce the lime zest and juice it calls for by just a little bit (lime can be so strong). I also substituted brown rice for the white rice one time (yay fusion), it wasn't to bad ( I was looking for a healthier alternative) but i highly suggest adding more of the spices if you do that. The brown rice flavor seemed to over power the spices I added.

Roll slices in flour mixture, dip them in egg and then drop them onto a plate with panko breadcrumbs, Parmesan cheese and a little more paprika and garlic powder. Put them in the oven at 425 degrees for 10 minutes, flip them over and then put them in for 10 minutes more. I served them with a side of marinara sauce for dipping.

Sweet and Spicy Asian Cucumber Salad ~ Recipe: Slice cucumber & sprinkle a little salt on each layer. Put a heavy bowl on top to press out water (or your salad will be very watery). Refrigerate for 1/2 hour, pour out water & rinse, pat dry. Then combine ingredients & marinate for 30 min.: 1/2 c. Green Onion, 2 T. Rice Vinegar, 1 T. Mirin, 1/2 T. Sesame Oil, 1/4 tsp. Chili Garlic Sauce.
