HOW TO MAKE GARLIC CONFIT: Peel cloves from 2 heads (or more) of garlic. Place in sm saucepan & just cover with olive oil ~1/2 to 3/4 cup for 2 heads. Over med heat bring the oil to just hint of simmer, reduce as low as it can go to poach garlic, not simmer. Cook for about 45 min until garlic is soft.
