Buffalo Chicken Meatballs - Made these last night and they were a HUGE hit! Every person that ate them took the recipe home with them. I use ground turkey b/c they didn't have ground chicken at the store I was at and added about 2.5 oz of blue cheese instead of 1. So yummy and healthy!

I think I'd try greek yogurt instead of sour cream as it's healthier and I am not a fan of sour cream :-) Buffalo Chicken Dip: 1 (8 ounce) package cream cheese, cubed •1/2 cup Ranch Salad Dressing •1/2 cup Frank's Red Hot Sauce (or less depending on spice preference) •2 (9.75 ounce) cans Chunk Chicken Breast in Water, drained •1/2 cup sour cream, or as needed (this is just to help cut the spice) •1/2 cup shredded cheese (optional) Sautee the chicken breast with the hot sauce in a large skillet (on medium to high heat) until it starts to bubble. Add the ranch and mix well. Mix in the cubed cream cheese and let it simmer until melted and bubbly. Turn the heat down and stir in the sour cream to taste. Transfer to a baking dish and top with shredded cheese. Serve with tortilla chips, crackers, bread or veggies. Yum! *This can also be made a few days in advance and reheats wonderfully in the oven
Buffalo Chicken Dip Recipe Ingredients: - 16 oz boneless, skinless chicken breasts - 1 tsp salt - 1/2 tsp pepper - 1 tsp garlic powder - 1 tsp onion powder - 8-oz. fat-free cream cheese, softened - 1/2 cup fat free sour cream - 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce - 2 tbsp low calorie butter ( I used Brummel & Brown) - 1/2 packet of Hidden Valley Ranch Dressing Dry Mix NOTE: If you are feeling lazy, you can use two 9.75oz cans of white chicken meat in water (drained), instead of the grilled chicken, but the taste isn’t nearly as good as using actual grilled chicken breasts. Directions: Preheat oven to 325 degrees. Rub chicken breasts with salt, pepper, garlic powder and onion powder. Spray a skillet with non-fat cooking spray, and set on med/high heat. Put in chicken breasts, and cook until brown on both sides and meat is cooked through. Once meat is cooked, cut it up into bite sized shredded chunks. Set aside. In a large, oven safe bowl, stir cream cheese and butter until smooth. Add in chicken and other remaining ingredients, and mix until thoroughly combined. Bake in the oven for about 20-25 minutes, or until dip has heated all the way through. Clean Eating Spicy Buffalo Wings. If you use Frank's Red Hot Sauce it is also gluten free! Fried then broiled (Makes 8 servings – 1/2 pound each) Sauce Ingredients: 1 cup Frank’s Hot Sauce (or any clean hot sauce you like, low sodium is best) 1 tablespoon olive oil 1 tablespoon garlic powder 1 tablespoon onion powder 1/2 cup honey (if you prefer a less spicy wing) or 1/4 cup (if you prefer a more spicy wing) 2 teaspoons molasses 1 teaspoon paprika 1/2 cup clean BBQ sauce (optional – I didn’t use any, but it would be a nice addition) Chicken Ingredients: 4 pounds chicken wings 2 tablespoons olive oil 1 tablespoon garlic powder 1 tablespoon onion powder Directions: Preheat oven to 350 degrees F. If you purchased your wings frozen, be sure to allow ample time for them to defrost. Line a large casserole dish (you may need 2 dishes depending on the size you have) with foil. You will be wrapping the chicken completely in foil, so allow enough to completely cover the chicken all the way around. Place your wings in the foil and be sure they are single layered. Pour the oil over the chicken and mix the chicken in the dish to completely coat it with the oil. Sprinkle the chicken generously with garlic powder and onion powder. The given measurements are only suggestions. You could certainly use more or less if you like. Pack the foil around the chicken so that it is sealed on all sides. Bake in oven for 50 minutes. While the chicken bakes, combine all sauce ingredients in a medium mixing bowl with a whisk. (Be sure to whisk again just before pouring over your chicken.) Remove the wings from the oven, open the foil (don’t burn yourself with steam), and pour off any liquid in the bottom of the foil. Pour your sauce over the chicken. Turn your oven to broil. Place the chicken back in the oven UNcovered, for 10 minutes. Watch the wings carefully. If they need to be removed in less than 10 minutes, do so. You just want to brown them a bit and get the sauce to sear just slightly on to the meat. Remove from oven, allow to cool and place in a serving dish, being sure to pour any sauce left behind in the dish over the chicken.

Baked Blooming Onion - I'll admit it, I used to work at outback steakhouse. And yet, even with them telling me the ridiculous nutrition facts of the bloomin onion (think like the equivalent of a couple dozen big macs...), I still loved it. That being said, it is still delicious to me but now gives me a stomachache - definitely need to try this baked version and see how it compares!
