Eggplant pizzas. Preheat oven to 425, Cut eggplant to 1/4" thick, spread oil, salt and pepper. Bake eggplant 5 minutes on each side. Cover with tomato sauce, mozarella, bake until cheese is browned. Used 4 oz. mozz. for 1 bigger eggplant.
Jamaican Beef Patties - I really enjoy Jamaican food and I would love to try these . But I find that much of Jamaican food is way to hot for me so I would have to cut way back on the chilies or find a substitute for the Scotch Bonnet peppers.
