Pot roast is marinated and then slow braised in Southwestern spices to create that flavorful authentic Mexican shredded beef you find in tacos, burritos and enchiladas. One pot roast and you can make breakfast burritos, street tacos or even Huevos. Easy to make, I'm not sure I'll ever use ground beef for Mexican again.
