Cross-rib roast - slow cooked Brush roast with 2 tablespoons balsamic vinegar Seer meat 2 minutes each side until just browned Make a paste of 2 tablespoons minced garlic, 2 tsp dried thyme, 1 tsp dried rosemary, 1 tbsp salt, 1 tsp pepper and 1 tbsp olive oil and apply to meat Roast meat at 225 for 4-5 hours (for 3 1/2 lb roast) until 145 degrees Remove from over and cover loosely for foil for 15 to 25 minutes I served mine with red potatoes and asparagus
