If you had a week off where would you go?  RS:  Any place tropical, ideally, Costa Rica.  We spent some time there with great friends years ago and the fishing was just ridiculous. I like to hunt and fish, other than that I like to do anything with my kids; throwing the football with my son, doing whatever my girls are into that day, which tends to   change daily and going to the beach with the family. If you can have a team that understands what it means to serve and is vigilantly conscious of what customers are experiencing and you balance that with great food and a fun environment, it will all come together. How long have you been involved in the restaurant industry?  RS:  After college, I started a few chicken-finger restaurants. I sold out of those in 2000 and moved to Louisiana, where I served as Vice President of Operations for Raising Cane’s Chicken Fingers. When I started there were 7 restaurants and when I left in 2008 there were around 72 restaurants. RS: Two-and-a-half years. 10 years prior to moving here, we were living in Baton Rouge, Louisiana, with our three kids, Roddy Jr. (8), Lucy Katherine (7) and Bella (3). My wife is also from Georgia (Waycross), and after a lot of discussion we both thought it was important to be closer to family and moved back East. I really believe you have to be a friend to have a friend.   It’s a lot like my restaurants; I like having a fun space for friends to come over to enjoy, along with good food.
