Slow Cooker Sweet Pork Barbacoa Cafe Rio Copycat - Made 4/8/14 with a pork loin roast and everything else as called for. Cooked on high for about 2.5 hours, then turned it down to low until dinner time, then shredded it and mixed some of the juices back in for serving. We had it as taco/taco salad filling and it was so yummy! Served it with cilantro lime rice. Next time I might add a little more sugar and maybe some cumin. Will definitely make it again!!!
Pioneer Woman Simple Sesame Noodles - Made these 3/5/14. Didn't have rice vinegar or hot chili oil, so I just left them out and added toasted sliced almonds. Pretty tasty! I'll definitely make this again and serve it with some teriyaki chicken or something.
Black Bean and Quinoa Enchilada Bake - made this 3/2/14 and it was so good! I omitted the jalapeno and added a pound of ground beef. We topped it with tomatoes, avocados, green onions and sour cream. It's super filling and had great flavor! It would be great with shredded chicken or meatless, like the recipe originally calls for. We will definitely make it again!

Butterscotch Caramel Peach Cobbler - Made this 7/7/13. Man, it was so good! I added about a cup of raspberries right before I put the peaches on top and then we served it hot out of the oven with whipped cream - so yummy! I made it in an 8x8 pan though and I think that was a little too small. Next time I'll try a 9x9 and that should work better. I think next time I'll melt less butter in the bottom of the pan too. There was a huge puddle of butter on top when I pulled it out of the oven...

Chicken Tortilla Bake - I've made this a few times, but I've tweaked it a little, here's how: Season the chicken with taco seasoning and then bake it before shredding it and layering it in the casserole dish. Use salsa instead of Rotel and just keep adding until it tastes right. I added some sour cream, a can of rinsed & drained black beans, and a handful or two of frozen corn to the soup mix. The extra ingredients add some bulk so I make it in a 9x13 and just tear up a few more tortillas.

I made this back in the spring and it was pretty good! Its a little time consuming, but worth it in the end. I followed some if the suggestions for the sauce from the comments and added pineapple juice. I also added a frozen stir fry veggie mix to the pan when baking. It made a lot and I ended up doubling the sauce.
