A beautiful sorrel risotto with crumbled goat's cheese

The sorrel is flash-cooked here, then stirred though right at the end of cooking. This gives the risotto a vibrant green colour and a really fresh taste. I think goat's cheese adds a beautiful creaminess, so I've roasted some here. Crumble it over the risotto when you serve it – it balances the flavours beautifully.

This is a great pasta dish using rigatoni, which is quite robust. It makes a really nice lunchtime snack. The mascarpone or crème fraîche is a lovely addition, but you can leave it out if you prefer. It will give you a wonderful mottled sauce, but try it without first and see how you go.

Mini shell pasta with a creamy smoked bacon and pea sauce

This is one of the dishes I cook for my kids, but to be honest, it's so good that me and Jools always eat it too! Mini pasta shells are actually meant to be added to soups, but they're quick and easy to cook, which makes them a good thing to serve with pasta sauces. All in all this should take you no more than five and a half minutes to cook. However, if you decide to go for a bigger type of pasta, remember that it will need more time to cook than these mini shells.

Grilled mushroom risotto

A mushroom risotto can be taken in many different ways, depending on what kind of mushrooms you have and whether they are introduced at the very beginning of cooking or just added at the end, as I'm going to do here. The inspiration for this recipe came when I was in Japan and saw mushrooms being cooked completely dry on a barbecue or griddle pan. This way of cooking brings out a really fresh and nutty flavour in them

Wild garlic can be found in meadows all over the country in April and it has a wonderful earthy flavour. Gennaro has even stumbled across some at a local park in the middle of London, so keep your eyes open. You should be able to get hold of it at good green grocers or your local farmer's market, but, if not, you can sort of mimic the flavours by blitzing some fresh spinach and a couple of cloves of regular garlic together, so you get a wonderful green garlicky sauce.

Tagliatelle with asparagus and tomato

As kids love pasta and tomato sauce, this is an easy way to encourage them to try asparagus. Like the 'full of veg' tomato sauce you can always whiz the asparagus in a blender if you think they'll be suspicious of the green bits. The tomato does a good job of mellowing the flavour of the asparagus and once they're used to eating it there are loads of wonderful dishes you can introduce them to.

Yellow bean, vodka and smoked haddock risotto

The thing about risottos is that you can never have enough combinations, and just when you think you've done them all you come up with a new one that hits the spot. The use of vodka instead of wine leaves you with a fragrant freshness when the risotto is cooked, which marries fantastically well with smoky flakes of haddock and the al dente crunch of fine yellow beans.
