Under 500 cal Fiesta Couscous Couscous 1c, Wtr 1c, Olive Oil 3T, Garlic 1T, Red Bell Pepper ¼c, Scallions 4ea, Tomatoes (cherry 1/4) 1c, Basil ½c, Balsamic Vinegar 1T, Salt & Pepper To Taste, Parmesan Cheese (grated) ¼c 1. Stir couscous in boiling water & return water 2 boil. Cvr & rem pot frm heat. Let sit 5 minutes, fluff w/ a fork. 2. When cooking, heat oil in sauté pan ovr med heat. Place garlic, grn onions & peppers, sauté for 2-3 min, add tomatoes, basil & couscous. 3. Stir in vinegar.
