Roast Kumara, Broccoli and Lentil Salad // via Homestyle Mag Chop kumara into chunks and roast in a 180C oven for 45min, or until soft and golden. Lightly boil broccoli florets and edamame beans, then refresh in cold water. Drain a can of lentils, combine with a handful of bean sprouts, add the kumara, broccoli and edamame beans. Mix together 1tsp dijon mustard, 1tsp honey, juice of a lemon and a good lug of olive oil. Toss gently, top with chopped rocket and a sprinkle of toasted seeds.
