Broccoli and cheese mini egg omelets...with a few alterations. No need to use cupcake liners. Even when greased down, they still stick to the egg muffins. When pealing the liner off, they take off chunks of the muffins. Bake directly in greased down, nonstick cupcake/muffin tray. They turn out great :)
