Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this. We ate it for dinner last night and it was really good. Super easy to prepare and cleanup! Will make again!
Roasted cabbage. INSANELY delicious, easy, inexpensive and healthy. (1 t. olive oil, 2 T. bacon bits, 2 T lemon juice, 1 T. worcestershire, 1/4 t. salt, 1/4 t. pepper, 1 Cabbage, quartered, individually wrapped. Bake at 425 degrees for 20-30 minutes)
