Shrimp ceviche - this is pretty much a staple as an appetizer that is my go-to for potlucks. So easy to make, healthy, and everyone enjoys. I buy the tub of little shrimp at Costco, some fresh pico de gallo, and lots of avocado (guacamole can work too).
Skinny Shrimp Alfredo Pasta Bake - Looks like another yummy freezer meal!*update: not a good freezer meal. Maybe if you use different pasta. Whole grain penne does not hold well in the freezer. Still tastes good, but we ended up with Shrimp Alfredo Mush.
