Guacamole Brushetta ½ loaf French bread 1 clove garlic 2 T EVOO 2 tomatoes 2 avocados 1/3 c onion ¼ c cilantro 2 T lime juice ½ t salt ¼ t pepper 400ºF. Slice French bread diagonally into ½". Toast for 3 min, then flip & toast an additional 3 minutes. Remove bread from oven & immediately rub with garlic clove. Brush tops with EVOO. Combine chopped tomatoes, avocado, onion, cilantro, lime juice, s & p. Mix gently making sure the avocado is coated in lime juice. Spoon onto toast.
