Most recipes will tell you to blanch the peaches too. But I’ve figured out a way around that, not because I’m totally rebellious, you could blanch them for 1-2 minutes if you want, but I think it’s easier & faster to peel them…plus, in my book, the less cooking time = the more nutrients....
