Balsamic Grilled Zucchini - I did generally the same recipe. I coated them in a balsamic garlic dipping oil. I've had it in my cabinet for a long time since I'm trying to eat less carbs, so I figured I'd put it to good use.
Cinnamon Pecan Roasted Butternut Squash - Easy, simple, sweet and just so stinking good! And you can serve this with anything and everything! Used toasted pecans and almonds and added some dried cranberries.

Garlic Spaghetti Squash, Spinach, and Bacon, + melted Parmesan cheese and toasted pine nuts. Really good, I added the garlic (naturally.) and turkey bacon. Don't be afraid of salting/seasoning heavily - the spaghetti squash has NO flavor.
