In a bowl mix olive oil, salt, pepper, fresh rosemary, potatoes, zucchini, baby carrots, sweet potatoes, whole garlic cloves, onions, and tomatoes. Bake at 350 for 45 minutes. Sprinkle veggies with parmesan for the last 10 minutes. So good and couldn’t be easier! Need to make sure to cut potatoes small enough so they can cook in allotted time.
Cut zucchini in half lengthwise and carve the center. Chop the insides and sauté with onion and garlic. Let cool. Meanwhile, add tomato, basil, bread crumbs and mozzarella, toss to combine.
