Prep this stuff for salads at the beginning of the week when everything is really fresh and "lively" and then toss it into a quick soup or cooked side when it is less awesome for eating raw. Make quick and easy fruit salads for the week. Use your favorite fruits: strawberries, blueberries, kiwis, bananas, etc. Add a splash of orange juice and throw it in the freezer overnight. By the time lunch time rolls around, the fruit will be thawed but still cold, and you're ready for a healthy lunch.
