Mexican Sour Cream Rice-this is awesome! We loved it and it wasn't too spicy for the kids. Great Mexican side dish! 1 cup uncooked long grain white rice 1 (14 ounce) can chicken broth 1 cup sour cream 1 (4 ounce) can diced green chile peppers 2 cups shredded pepper Jack cheese, divided 1 1/2 cups frozen corn 1/4 cup finely chopped fresh cilantro salt and ground black pepper to taste
8 Can Taco Soup. You literally put 8 cans of stuff together in a pot and there you have your meal.---I couldn't find the right sized canned chicken, so I used a little bit more than the recipe calls for, but this was great! I recommend adding some extra chili powder, and sprinkling the top with cheese and maybe tortilla chips. It takes awhile to heat up--at least an hour--so be sure to budget your time!
Baked Chicken and Spinach Flautas. These were awesome! They baked up to crispy perfection. Things I did differently: I used a rotisserie chicken, so I didn't have to poach any, and I used thawed frozen spinach. I sauteed the spinach with the diced jalapeno in about half a cup of chicken broth--1/4 c. isn't enough. The recipe says to cut burrito-sized tortillas in half, but I recommend using whole soft taco-sized tortillas instead, as they rolled much neater. I also cut them in half to serve.
