Make Clotted Cream (Slow Cooker Method)... from The Culinary Life. Since it takes 8-10 hours to make clotted cream, a slow cooker is SO much better than the oven (which is how most recipes make it)!  Note: It's very important not to use ultra-pasteurized cream (I'll probably get mine at a natural foods store).

Add the sugar and salt. Gradually add the whipping cream and continue beating until mixture is stiff. Store in refrigerator.
