Southwestern Baked Spaghetti...to keep it vegetarian, I omitted the ground beef. I mixed the cheddar and Monterey jack cheeses into the spaghetti and topped with a mixture of 1/2 cup Mozzarella cheese and 1/2 cup shredded Parmesan cheese.
