Baked Salmon with Garlic and Dijon. In a small bowl, combine 2 Tbsp freshly chopped parsley, 2-3 cloves pressed garlic, 1.5 tsp Dijon, ½ tsp salt, ⅛ tsp pepper, ⅛ cup olive oil and 2 Tbsp fresh lemon juice. Mix well. Cut salmon into even portions and lay them onto your lined baking dish skin side down. Generously brush all sides of your salmon with the sauce and top with fresh lemon slices. Bake at 450°F for 12-15 minutes or until just cooked through. Don't over-cook or your fish will be dry. Voila! Easy, excellent dish.

Chocolate Covered Frozen Banana Bites Recipe (with my substitutions): FROZEN BANANA BITES What you'll need . . . 2 large organic bananas 1/4 to 1/3 cup organic chocolate chips 1/4 to 1/3 cup organic peanut butter Unsweetened organic coconut flakes

FROZEN BANANA BITES What you'll need . . . 2 large bananas 1/4 to 1/3 cup vegan chocolate chips 1/4 to 1/3 cup natural peanut butter Unsweetened coconut flakes Method . . . Set out a large plate or bowl with a piece of parchment or wax paper on it. Cut up the bananas into good-sized chunks. Each banana should give you around 5 to 6 pieces. Heat the peanut butter and chocolate chips in the microwave on high for about a minute. Then stir until smooth. Dip the banana pieces in the chocolate-peanut butter mixture. Lay them out leaving some space between them on the parchment/wax paper. Then when you've "covered" them all, use the remaining mixture to spoon over the tops (for even more chocolate-y goodness). Then sprinkle the unsweetened coconut flakes on top. Transfer to the freezer for about an hour until hardened. You can enjoy them like this (but they really aren't frozen yet -- and when they're frozen, the banana tastes like vanilla ice cream) . . . I suggest then covering with some plastic wrap (or really you can do all of this in some kind of Rubbermaid container) and let freeze overnight.
Crustless Zucchini, Corn and Tomato Quiche - I will replace the feta with low fat mozz, canola spray for the buttering the pan, use egg substitute, non-fat evaporated milk for the cream and almond milk for the whole cow's milk,& low fat parmesan. I may add some cooked vege bacon. Can be a good meal for vegetarian night!
