Chickpea and Feta Salad. Drain the chickpeas, rinse and place in the salad bowl. Add crumbled feta, spring onion, spinach and lemon juice, season with salt and pepper. Add the cooled onion and garlic mixture and remaining oil and mix well.
Figs are naturally pretty so I didn’t want to transform them too much. Just a few decadent ingredients to kick them up a posh notch or two, + a little booze for infusing and dark chocolate for dipping.
