Holy Yum Chicken Yield: 4 servings | Prep Time: 5 minutes | Cook Time: 40 minutes INGREDIENTS: 1 1/2 – 2 pounds boneless, skinless, chicken thighs (most of the fat cut and discarded) 1/2 cup Dijon mustard (must be Dijon mustard, no substitutes) 1/4 cup pure maple syrup (again, no substitutes. No fake Aunt Jemima stuff) 1 tbsp. rice wine vinegar 1/4 tsp. salt 1/4 tsp. ground black pepper 1 tbsp. cornstarch 2 tsp. fresh rosemary for garnishINSTRUCTIONS: * Preheat oven to 450 degrees Fahrenheit. Line a 8×8″ oven-proof pan with 2 layers of tin foil. * In small bowl, whisk together Dijon mustard, maple syrup, rice wine vinegar, salt and pepper. * Place the chicken thighs in the foil layered pan then pour the mixture on top of it. Turn the chicken around in the sauce to make sure it gets all coated. * Bake, uncovered, for 40 minutes. * Remove from oven and let chicken sit for 5 minutes then transfer to a plate. Do NOT discard the liquid. * Immediately after plating chicken, whisk in the 1 tbsp. of cornstarch into the liquid in the pan. You’ll create a nice, thick sauce to drizzle over your chicken. You need to do cornstarch mixing immediately because the liquid needs to be hot in order for it to thicken properly. If it’s still not thickening after 1 tbsp., you can add a little more. * Sprinkle rosemary on top before serving. * Serve with rice or potatoes or vegetables. Note: If you like things more tangy, I would add 2 tbsp. of rice wine vinegar instead of 1 tbsp. I did this the second time I made this and it was a nice tangy kick with the sweetness that subdued it. If you like things on the sweeter side, keep it to 1 tbsp. of rice wine vinegar. Regardless, taste the sauce after mixing it together and adjust to taste. :)DISCLAIMER: * If you don’t like mustard, you likely will not like this dish. 1/2 the recipe’s ingredient is mustard. * It will taste mustardy with a nice hint of sweetness! So again, if you don’t like mustard, don’t make this. * If you don’t follow directions and want to improvise, that is definitely ok! But please do not come back to yell at me for a failed dish. The instructions are laid out completely below because I have tested it myself and it works the way it’s written below. * If you do not use the right equipment it will likely not turn out either. 8×8″ pan means 8×8″ pan. 2 layers of foil means 2 layers of foil. Why? 8×8″ pan will keep the sauce together and compact and won’t cause it to spread out over a large surface area. If you put it in a larger pan, it will spread, therefore, causing the sauce to get cooked off and you’ll end up with dry chicken and little to no sauce. Double layering the foil insulates the sauces and the chicken, it’ll keep the sauce from burning on the scalding hot pan. * Yes, it really is cooked at 450 degrees. I’m not going to lie to you. Yes, it’s very high but it also works (proof: above pictures!) * If you’re using chicken breasts, reduce cooking time to 25-30 minutes or you’ll end up with dry chicken. * Whole grain mustard is not the same as Dijon mustard. * Rice wine vinegar and rice vinegar are the same thing. The names are interchangeable.

A new version of a honey mustard chicken using Dijon and maple syrup. The blogger has great suggestions for how to adjust this to your personal taste; we prefer sweet to spicy/tangy, so I even added a little extra syrup. Following her directions exactly, the chicken cooked beautifully and the sauce was divine. Prep takes seconds, and it cooks in 40 mins. We served with brown rice and broccoli. Easy, healthy meal. Cowboy Caviar 1 can black eyed peas, drained and rinsed 1 can black beans, drained and rinsed 1 can shoepeg corn, drained and rinsed 4-5 Roma tomatoes, seeds removed and diced 2-3 diced avocados, ripe but still firm 4 green onions, sliced thin (I used 1/2 purple onion diced finely because that's all I had) around 1/2 to 3/4 cup Zesty Italian dressing 1/2 bunch cilantro, chopped finely 1-2 limes ground pepper and salt to taste Drain and rinse the black eyed peas, black beans, and corn. Add to a large bowl. Dice the tomatoes, making sure the seeds and insides are removed. You want to do this to make sure that there isn't too much liquid in the dip. Add the diced tomatoes and cilantro to the bowl. Slice the green onions finely (or purple onion) and add to the bowl. Dice the avocado and squeeze a little of the lime juice over the avocados so they don't brown as quickly. Squeeze the rest of the lime juice into the bowl. Add the Italian dressing and stir to coat all the ingredients. Add salt and pepper to taste. Chill in the refrigerator until cold and flavors have marinated together. This is best served the same day as prepared. Serve with tortilla chips.

Homemade Corn Dogs. Miriam - this batter is fantastic. Very light. I only had stone ground corn meal which gave the food a little crunch. It it was yummy. The recipe called for 10 dogs for the batter however I was able to make 16 hot dogs, 8 cheese sticks and many pickles. I still had batter and would have made onions if I would have had some. I've going to try and freeze what I made so it's ready for when I need it. Keeper!

Ham & Cheese Pretzel Bites POSTED IN APPETIZERS, FAMILY FAVORITES For New Year’s Eve, I wanted to make an easy appetizer that was at least a little impressive. These pretzel bites were perfect, except that I poorly planned my timing so that I was making them as our guests arrived. Little did I anticipate that our guests were going to finish making some of their dishes in my kitchen, too, so I was a bit distracted on making these. So distracted that they turned out with an unappetizing appearance. Fortunately, they still tasted great! A few days later, we were invited to our friends’ to watch the UFC fight, so I made another batch of these to bring with us. This time I didn’t have to hurry to free up my kitchen, so their appearance was much more appealing! Contrary to what it seems, it doesn’t take much effort to make these. Just whip up the dough, let it rise for 2 hours, shape the pretzels, let rise again for 30 minutes, then boil and bake! If you’re anything like me, you’ll have the itching to pinch the sides of the rolls shut, but don’t. Some of the ham and cheese might ooze out, but that’s fine. They puff right up in the oven, resulting in the perfect soft pretzel texture. Served with your favorite mustard dip, these buttery, salty bites will have you asking for more! Print Ham & Cheese Pretzel Bites Prep Time: 2 hours, 30 minutes Cook Time: 15 minutes Total Time: 2 hours, 45 minutes Yield: 8 servings Serving Size: 6 bites 1 package (1/4 oz) active dry yeast (or instant yeast) 2 Tablespoons plus 1 teaspoon packed brown sugar, divided 1/4 cup warm water (110-115 degrees F) 1 cup warm milk (110-115 degrees F) 2 1/2 to 3 cups flour 1/2 cup finely chopped ham (about 3 ounces) 1/2 cup shredded cheese of choice (I used cheddar) 6 cups water 4 teaspoons baking soda 4 Tablespoons unsalted butter, melted 1-2 Tablespoons coarse salt Combine the yeast, 1 tsp brown sugar, and warm water in a large bowl. Set aside until foamy, 5-8 minutes. (If using the instant yeast, you can skip this step and just add it to the flour.) In another bowl, stir together the remaining 2 Tbsp brown sugar and warm milk until dissolved. Add 2 1/2 cups flour and milk mixture to the yeast. Stir with a wooden spoon until a soft dough forms. Add the remaining flour as needed. Turn the dough out onto a lightly floured surface and gently knead a few times, forming a smooth ball. Brush the inside of a large clean bowl with olive oil. Transfer the dough to the bowl and cover tightly with plastic wrap. Allow to rise in a warm, draft free area for about 2 hours, until dough has doubled in size and bubbles appear on the surface. Turn out the dough onto a lightly floured surface. Divide into 4 equal pieces. Lightly dust your hands and rolling pin with flour. Roll one of the four sections into a 12×4-inch rectangle. With the long side facing you, gently press 1/4 of the ham and cheese into the bottom third of the dough, and roll as tightly as possible, starting with the end that has the filling. Cut into 12 1-inch pieces and transfer to a sheet pan lined with parchment paper. Repeat with remaining 3 portions of the dough. Let rest, uncovered, at room temperature for 30 minutes. Oatmeal bake. I substituted coconut oil for the butter. INGREDIENTS 2 cups rolled oats 1/3 cup brown sugar 1 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1 cup walnut pieces 1 cup berries (your choice) 1/2 cup chocolate chips 2 cups milk 1 large egg 3 tbsp butter, melted 1 tsp vanilla extract 1 ripe banana, peeled, 1/2 -inch slices INSTRUCTIONS Preheat oven to 375 degrees. Generously spray a 2-qt pan with cooking spray. In a large bowl, mix together oats, sugar, baking powder, cinnamon, salt, half of the walnuts, half of the chocolate chips, and half the berries. In another large bowl, mix together milk, egg, butter, and vanilla extract. Add the oat mixture to the baking dish. Add the remaining walnuts, chocolate chips, and berries. Add the banana slices in a single layer on top. Pour the milk mixture over the whole thing and shake the pan a bit to make sure all the oats get soaked evenly. Bake it for 30-40 minutes or until the top is a golden brown and the milk has set. If you want it extra sweet, just sprinkle some more brown sugar on the top.
