<p>Secret Recipe Club time again. Man it comes so fast! Months are just flying by. Oh, the truths of getting older.</p><p>This month I was assigned to Christina's blog, Mis-Cakes Oven Adventures. So many tasty desserts to choose to make! With recipes like PB Banana Brownies, No Bake Nutella Cookies, and Brown Butter Monkey Bread, she made it really hard for me to narrow it down to the perfect recipe. But when I saw this, I was done. Over. Finished. No more searching. I've found my calling. I've died and gone to heaven.</p><p>A strawberry shortcake simplified without all the cooking, and yet so amplified by the use of donuts. You'll have these desserts whipped up in a jiffy, and people will think you're all fancy schmancy when really all you had to do was slice some strawberries and have your mixer whip up some whipped cream.</p><p>Done and done!</p><p>Glazed Donut Strawberry Shortcake</p><p>Place strawberries in a bowl. Top with sugar and mix. Let sit for a bit.</p><p>Add heavy whipping cream to electric mixer bowl and whisk on high until soft peaks form. Turn mixer to slow, adding powdered sugar and vanilla. Return to high speed and beat until stiff peaks form.</p><p>Slice each donut and set top slices aside. On the bottom of each donut, place 1/4 of the strawberries and top with 1/4 of the whipped cream. Top with the top of the donut.</p><p>Forget slaving over a hot stove all day. These shortcakes are the perfect summer dessert. Quick, easy, no cooking required, no heat required, and just as delicious as the real thing.</p><p>No cooking

December 5 National Comfort Food Day Chicken Pot Pie
Chicken Pot Pie 1 (10 3/4 ounce) can condensed cream of chicken soup (use low sodium!) milk 2 large (boneless, skinless) chicken breasts, cooked and diced 1 (4 1/2 ounce) jar sliced mushrooms, drained 1 1/2 cups diced frozen peas and carrots 1/4 cup finely chopped onion salt and pepper, rosemary, parsley, etc (whatever seasonings you love best) Topping 1  cup biscuit mix 1/2 cup milk 1  egg, beaten Put soup into a casserole dish and stir, adding milk a little at a time until desired consistency is reached. Add chicken, mushrooms, carrots, peas and onions, stirring to blend well. Add salt and pepper to taste, if desired. Blend biscuit mix and add 1/2 cup milk and beaten egg, stirring until smooth. Pour batter over top of pie filling. Bake 45 minutes at 375° or until top is golden brown. Allow to sit for 10-15 minutes before serving. Makes eight servings, 200 Calories each. 17g carbohydrates, 12g protein.*Option* Pot pies are extremely easy to tailor to your palate. Use different vegetables, tofu, and try substituting chicken broth and heavy cream for the canned soup. Also, I cannot stress the importance of seasoning well. The underside of the dough topping tends to stay undercooked in the center, but every time I’d had a homemade pot pie they’ve been like that, so it’s a comfort to me.
I don't know if I can go so far as to call it "healthy" Chicken Pot Pie, but it's under 200 calories a serving. And I ADORE chicken pot pie!!

Mrs. Wilkes' Baked Buttermilk Chicken famous for her restaurant in Savannah GA. This simple and delicious chicken will knock your socks off. It's so easy and so packed with flavor, it's amazing ngredients 4 to 6 boneless, skinless chicken (can use bone-in chicken breasts, but remove skin and plan for longer cooking time - see below) 1 1/2 cups buttermilk 1/4 cup flour 1/2 tsp. salt 1/4 tsp. black pepper 1/4 cup butter (I prefer unsalted) 1 (10 1/2 oz.) can cream of mushroom soup parsley, for garnish Optional: Add 1/2 tsp. of cayenne pepper to flour dredge How to make it Preheat oven to 425 F. Dip chicken in 1/2 cup of the buttermilk, then roll chicken in a mixture of flour, salt and pepper (and optional cayenne pepper). Melt butter in a 9" x 13" inch pan. (**NOTE: If I am using bone-in chicken, I add a tbsp. of olive oil for the longer baking time. It helps prevent the butter from burning and adds a nice extra flavor.) Place the dredged chicken in the pan, meat-side down. Bake uncovered for 30 minutes (1 hour for bone-in breasts). Turn the chicken over and bake for 15 minutes more. Combine the remaining 1 cup of buttermilk and the cream of mushroom soup. Pour over chicken and bake for 15 minutes more. Remove the chicken, place on a platter, and garnish with parsley. Serve with pan gravy. **** Our Suggestion: This gravy is so delicious that we sometimes double the gravy part of the recipe to make sure we have enough gravy to go over potatoes, biscuits - or just to drink from a martini glass. Lemon Chicken Picatta 3 Large Boneless Chicken Breast Halves, cut into medallions salt and pepper to taste 1/2 C. flour 2 T. vegetable oil, (more as needed) 1 clove garlic, minced 1 C. Chicken Broth 1/2 lemon, thinly sliced 1/3 C. freshly squeezed lemon juice 2 T. capers, drained 3 T. butter 2 T. minced italian flat-leaf parsley Preheat oven to 200 degrees, and place a serving platter inside to keep warm. Season the chicken pieces with salt and pepper, then dredge in flour....
Hmmmm. chicken piccata. the easiest and most delicious chicken you will ever put in your mouth. -- Chicken Piccata (and Grated Zucchini Saute) adapted from Cook's Illustrated serves 4 2 to 3 large lemons, cut one lemon into thin slices and keep the other for juicing (you'll need 1/4 cup juice) 4 boneless, skinless chicken breasts, rinsed, thoroughly dried, and sliced horizontally to make two cutlets from each breast (approximately 1/2 inch or less in thickness) 1/2 cup unbleached, all-purpose flour 4 tablespoons olive oil, divided 1 medium clove garlic, minced 1 cup low-sodium chicken broth 1/4 cup dry white wine (optional) 2 tablespoons drained small capers 3 tablespoons unsalted butter, softened (room temp is fine) 2 tablespoons fresh italian parsley, minced (I forgot this and it was still great) 1. Preheat oven to 200 degrees. 2. Prep your cutlets by generously seasoning them on both sides with salt and pepper. Place your flour in a shallow dish and your seasoned cutlets on top of flour. Set aside. 3. Heat 2 tablespoons olive oil in a skillet over medium high heat. Using tongs, lightly dredge your cutlets with flour on both sides, one by one, and place them in the skillet. Saute the cutlets, without moving them, for approximately 2 to 3 minutes. At about 2 minutes check to see if the first side is nicely browned. If so, turn them over and brown the other sides. Again...for another 2 to 3 minutes. Remove pan from heat and place cutlets on an oven-safe dish. Put cutlets in oven to keep warm while you cook up additional batches or start your sauce. 4. Add remaining 2 tablespoons olive oil to same skillet (DO NOT wash it out) and return it to the stove over medium heat. Add garlic and saute until fragrant (about 30 seconds)...being careful not to burn it. Add broth, wine (optional) and lemon slices. Increase heat to high and scrape skillet with a wooden spoon to loosen browned bits from cutlets. Simmer until liquid is reduced to about 1/3 cup. Add lemon juice and capers and simmer until the sauce reduces again to about 1/3 cup. Remove pan from heat. Add butter and mix in until melted. Add parsley (if desired). Spoon sauce over chicken and serve immediately. If you are serving your chicken over the Grated Zucchini Saute (see above copy for preparation), then simply spoon a bed of zucchini in the center of your plate and top with chicken piccata and then sauce.
