Cheesy Enchilada Stack --> I'm renaming this "Sloppy 'Chiladas" because that is exactly what they are! Mine even turned out just like the picture. The only thing I did differently was use less cheese and I used our tried-&-true enchilada sauce instead of the one they recommend. This tasted very good...but we have half the stack leftover and it is awkward to store. I would rather have made regular enchiladas that we can store and reheat easier. Fun recipe to make though.
Cheesy Enchilada Stack--by the way, generally stacked enchiladas are not considered "Mexican" food but "New Mexican" food. And typically in a restaurant in New Mexico you would order them "con huevos"--with 1 or 2 eggs on top. They're fantastic! I'll be cooking this recipe.

Weight Watcher cheese and Chicken Shells Cheese and Chicken Shells WW Points Plus: 9 points for 3 shells 12 jumbo pasta shells 1 1/2 c pasta sauce 2 large egg whites, gently beaten 1 1/2 c part skim ricotta cheese 4 oz. chicken, cooked and diced 1 c frozen spinach (chopped) thawed (drain all excess water) 2 tsp garlic powder 1 tbsp oregano 1 tbsp chopped basil 3/4 c part-skim mozzarella cheese, shredded 1/3 c grated parmesan cheese Preheat oven to 350 Cook shells in boiling water according to the directions on box. Rinse with cold water and set aside for later use. Lightly spray a 9x13 pan with cooking spray and spread 1/2 c of pasta sauce evenly over the bottom of the pan. Set aside. For filling: Stir together egg whites, ricotta, chicken, spinach, garlic powder, basil, and seasoning. Stir in 1/4 c of mozzarella cheese and parmesan cheese. Fill each shell with mixture and place filled shells in the baking dish on top of the sauce. Spread remaining sauce on top. Sprinkle with remaining cheese and salt and pepper to taste. Weight Watchers Cheddar Chicken Bacon Ranch Pasta Recipe 1/2 lb whole wheat penne pasta 4 slc bacon, diced 1/2 Tbsp light butter 1 lg chicken breast, boneless & skinless, cut into bite sized pieces 1 Tbsp all purpose flour 1/2 pkg ranch dressing mix ( 1/2 oz) 1 c fat free milk 1/2 c fat free shredded cheddar cheese salt & pepper to taste Directions 1 Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm. 2 Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but 1/2 tablespoon of bacon drippings from the pan. 3 Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned. 4 Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed. 5 Serve each plate of pasta with more bacon sprinkled over the top.
