6 cups cubed watermelon 1 cup crumbled feta cheese 1/4 cup chopped purple onion 1/4 cup chopped fresh mint 1/4 cup fresh lime juice 1 T. extra virgin olive oil *Half this recipe, if desired. Mix this salad right before you are ready to serve. In a large bowl, gently combine watermelon, feta, onion, and mint.  Pour lime juice and olive oil over mixture and toss gently to coat.  Serve immediately.
