Feta, Cheddar and Spinach Muffins 300g plain flour 2 1/2 tsp baking powder 100g cheddar 150g feta 130g spinach 1 egg 220ml milk 1 tsp cayenne pepper 30g butter melted chopped onion 170C/mark 3 Melt butter add onion Dry ingredients in one bowl, wet in another Add wet to dry Chop spinach Add the onion and spinach into the muffin mixture by hand using a wooden spoon Scoop into muffin cases using an ice cream scoop (this gives them a nice rounded shape) Cook for 30-35 minutes

MAC N CHEESE WITH SPINACH MUFFINS:: ~~Ingredients~~: 4 c cooked whole wheat or high fiber macaroni 1 T butter 1 T flour 1 c skim milk 1 garlic clove, minced 3 oz sharp cheddar cheese, shredded 3 oz Gruyere cheese, shredded 1 egg 1 egg white 1 (10 oz) package of frozen chopped spinach, defrosted, drained and patted dry (or you could use 1 cup cooked fresh spinach) Salt & pepper to taste ~~Directions~~: 1. Pre-heat the oven to 400. Lightly mist a 12-cup muffin tin with cooking spray and set aside. 2. In a small sauce pot, melt the butter over medium heat. Add the flour, mixing it into the butter until thick. Stir in the milk and garlic and raise the temp to bring the mixture to just under a boil. Add the cheese and whisk mixture together until thoroughly combined into a cheese sauce. 3. Remove the cheese sauce from heat and then mix in the egg and egg white (binding agents) until combined. 4. In a large bowl, combine the pasta, spinach, cheese sauce, salt and pepper and mix together. Spoon the mixture evenly into the cups of your prepared muffin tin. 5. Bake for 10-15 minutes until the tops slightly brown. Let cool 5 minutes before removing from muffin tin. Yields 12 muffins. Unfortunately, I love it so much that I rarely make it for fear that I will lose all portion control abilities and end up eating far more than I planned. Enter the Mac & Cheese Muffin. These individual sized portions of creamy, cheesy pasta are the perfect solution to satiate your cravings without going overboard. I ate two of them for dinner with a side salad and was happily satisfied. I think one would also make a perfect side dish to chicken, beef or pork. There’s even spinach in these so you can feel good about getting in some veggies! I used real, full fat cheese in these (at still only 4 WW Points+ per muffin that seemed worth it to me) but if you want to lighten them up further you could use reduced fat cheeses. I chose sharp white cheddar and Gruyere but feel free to get creative and use any of your favorite cheeses instead! Ingredients: 6-Cups Cooked Linguini Pasta 1 tsp. minced garlic 1/2 tsp. Pepper 6 oz. Sliced Mushrooms 1 Bag Fresh Spinach 1 Cup Bertolli Creamy Alfredo Sauce Directions: Saute garlic & mushrooms in a large sprayed skillet (3-minutes.) Add spinach & saute 3 minutes more. Stir in Alfredo sauce & pepper. Cook for 3 minutes more. Divide mixture into 6-servings and serve each over 1 cup of pasta!

Savory Spinach Bites Servings: 18-24 spinach bites, depending on how big you make them Ingredients 1/2 cup (1 stick) unsalted butter 1 small onion, chopped (about 1/2 cup) 1 teaspoon minced garlic (about 1 clove) 2 10-ounces packages frozen chopped spinach, thawed and drained 1 8-ounce bag of herbed seasoned stuffing mix***I use Pepperidge Farm because it’s the only vegetarian stuffing around. Which is sad, because I used to love Stove Top brand but then discovered that their “Cornbread” stuffing actually contained chicken. :( 6 large eggs 1 cup grated Parmesan cheese Salt and pepper, to taste Instructions 1. Preheat the oven to 350 degrees. 2. In a large sauté pan over medium heat, melt the butter. 3. Add onion and cook until the onions are translucent and soft, about 5 minutes or so. 4. Add the garlic and cook until fragrant, about 30 seconds. Remove the pan from the heat and let cool. 5. In the meantime, remove excess water from thawed spinach by pressing it between paper towels. **You do not need to cook the spinach. 6. In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan, salt and pepper, and onion/garlic mixture. Combine well. 7. Line a rimmed baking sheet with parchment paper. 8. One at a time, using your hands, roll the mixture into individual 1-inch balls. Place each one on the parchment-lined baking sheet. 9. Bake the balls for about 15-20 minutes, or until very slightly browned. **Your kitchen will smell fantastic, I promise. Dipping sauces: I used marinara, but you could use Ranch dressing, sour cream, horseradish, etc. Whatever you like!
