Salsa for a Crowd ngredients 4 cans (14-1/2 ounces each) diced tomatoes4 large tomatoes, chopped2 cups frozen corn, thawed1 can (15 ounces) black beans, rinsed and drained1 medium sweet onion, finely chopped1/3 cup lime juice1/4 cup minced fresh cilantro2 tablespoons cider vinegar2 tablespoons hot pepper sauce1 garlic clove, minced1 tablespoon coriander seeds, crushed1 tablespoon ground cumin1 teaspoon salt1 teaspoon coarsely ground pepperChopped jalapeno pepper, optionalcorn chips or tortilla chips Directions Place two undrained cans of tomatoes in a large bowl; drain the tworemaining cans and add tomatoes to the bowl.Stir in the chopped fresh tomatoes, corn, beans, onion, lime juice,cilantro, vinegar, pepper sauce, garlic and seasonings. Stir injalapeno if desired. Cover and refrigerate until serving. Serve withchips. Yield: 56 servings (1/4 cup each).
