The Heat Is On Salad: Ribbons of yellow squash & green zucchini on a bed of mixed greens tossed in a light vinaigrette with sliced mini heirloom tomatoes of various colors, red & orange pepper strips, purple onion, peas & grilled corn, dots of creamy goat cheese & crunchy nuts & a drizzle more Vinaigrette: 3 parts EVOO to 1 part red wine vinegar + a touch of balsamic, 1 smashed garlic clove, 1/2-3/4 tsp of djon mustard, pinch of salt, pepper & oregano. Shake in a jar & refrigerate.

Parmesan Broccoli and Cauliflower Bake. Can be made a day ahead, refrigerated and then baked just before dinner. Broccoli Cauliflower Casserole Ingredients: Instructions: 1. Preheat oven to 350°F. Mix bread crumbs, 2 tablespoons of the Parmesan cheese, 2 tablespoons melted butter and 1/2 teaspoon of the Italian seasoning in small bowl. Set aside. Cut up any large broccoli or cauliflower florets into bite-size pieces. 2. Melt 2 tablespoons butter in large skillet on medium heat. Add onion; cook and stir about 5 minutes or until tender. Stir in flour, remaining 1 teaspoon Italian seasoning, garlic salt and pepper. Add milk; cook and stir until thickened and bubbly. Add cream cheese and remaining 1/4 cup Parmesan cheese; cook and stir until cream cheese is melted. Add vegetables; toss gently to coat. Spoon into 2-quart baking dish. Sprinkle top evenly with crumb mixture. 3. Bake 40 minutes or until heated through and top is lightly browned.

Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!

Rustic Roasted Tomato Salsa 2 fresh jalapeno peppers 2 garlic cloves, unpeeled 1/2 cup finely chopped white onion 1 15-ounce can diced fire-roasted tomatoes with garlic, in juice 1/2 cup (loosely packed) roughly chopped cilantro 1 lime, juiced Salt and Pepper Heat a small skillet over medium heat, and dry roast the peppers and garlic, until soft and blotchy in spots. The peppers will take about 10 minutes, and the garlic will take about fifteen. Meanwhile, rinse the onion in a fine-mesh strainer under cold water. Shake to dry, and set aside. Stem and peel the jalapenos, and scrape out the seeds and membranes (or leave them if you want the salsa extra spicy)! Peel the garlic, and transfer it to a food processor, along with the jalapenos. Pulse until they are finely chopped, then add the tomatoes (with their juice), and pulse a few more times to make the salsa as smooth or as coarse as you want. Pour the mixture into a medium bowl, and add the onion, cilantro, and lime juice. Stir to combine, and add salt and pepper to taste. Cover and refrigerate, or serve immediately.
