Red-Velvet-Cookies-6 tablespoons butter, melted 1 box Red Velvet Cake Mix 2 eggs 1 tsp. lemon zest 3/4 cup powdered sugar 1 tsp. cornstarch Directions: Preheat the oven to 370-degrees. Line baking sheets w/ parchment paper. In a medium bowl, whisk together the powdered sugar and cornstarch. In a large bowl, beat the eggs, then added cooled melted butter, lemon zest and cake mix. Mix by hand. Roll into 1-inch balls and roll in powdered sugar mixture Bake for 7-9 minutes.
