Italian almond cookie recipe - with apricot jam or orange marmalade-- they are the classic soft amaretti which are a cross between a macaron and marzipan. Perfect with a cup of coffee-- and grain free.
Marshmallows ~ 2 envelopes (17g) powdered gelatin or 17g sheet gelatin (8 to 10 sheets), 1/2 C + 1/3 C cold water, 1 C sugar, 1/3 C light corn syrup, 4 large egg whites (1/2 C) at room temperature, pinch of salt, 2 t vanilla extract or 1 t vanilla paste, 1 C corn starch (or potato starch) + 1 C powdered sugar (for dusting). ~ 25-50 marshmallows.
