i'd like to try making meals from muffin tins as a sort of portion control. make something, freeze it and only thaw what you should eat. I will eat and eat whatever is in front of me, but most of the time i am too lazy to go get more food. This could work!
Make meatloaf in a muffin pan- it cooks in 15 minutes. Then 'frost' them with mashed potatoes
Chicken Parmesan Meatloaf "Muffins". I omitted onions for Matt and thyme because we didn't have any. I used ritz crackers instead of breadcrumbs and twice as much garlic as it called for. I added pepperoni to the garnish. I had to use ground turkey because the store didn't carry ground chicken.
