NO BAKE ENERGY BITES These delicious little no bake energy bites are the perfect healthy snack! PREP: 10 MINS TOTAL: 10 MINS INGREDIENTS: 1 cup (dry) oatmeal (I used old-fashioned oats) 2/3 cup toasted coconut flakes 1/2 cup peanut butter 1/2 cup ground flax seed 1/2 cup chocolate chips or cacao nibs (optional) 1/3 cup honey or agave nectar 1 tablespoon chia seeds (optional) 1 teaspoon vanilla extract DIRECTIONS: Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls.

One great thing about these paleo brownies is that they are sweetened with raw honey! Sweetening with raw honey is so much better than using sugar. 4/25/15 SOY & WHEAT FREE This was easy peasy with my new Cuisinart food processor. I doubled the ingredients, dropped the flax since I didn't have any, added mini Chocolate chips by Enjoy Life and smeared a pat of Land o Lakes Canola Oil Butter (cinnamon sugar). Washed down with a cold glass of cashew milk. Not feeling a bit deprived and the house smells amazing! When doubled, recipe made 17 muffins (not 18).

Immediately transfer to a cooling rack. When cookies are cool, frost them and then sandwich them like an Oreo. This will only make about 12-15 cookies total depending on how big you make them. Mix frosting ingredients together. Spread onto cool cookies. Sandwich together.
