Low Carb Chocolate Coconut Cream Mousse 1 can full fat coconut milk (NOT the one you use in cocktails) 2 teaspoons vanilla 2 tablespoons of your favorite low glycemic sweetener (you can also use powdered sugar) 2 tablespoons of sifted cocoa powder cocoa nibs as topping fresh fruit **optional
FUDGE (S) ½ c coconut oil 4 oz cream cheese ½-3/4 c cream 2 oz unsweetened baking chocolate Truvia to taste pinch of sea salt Throw everything but heavy cream in a pot, melt, and bring to a light boil for a minute or so. Dump in a blender and toss in the heavy cream. Blend until cream causes the mixture to be thick and creamy. Enjoy as a rich pudding! Or chill as delicious fudge!
