Delicious corn & potato chowder! If you cook it in a Dutch oven for a couple of hours (instead of the 20-30 minutes the recipe recommends), then the milk and mashing of potatoes are completely unnecessary, as the soup will thicken up on its own. I also add carrots, celery, and peas for some extra veggie goodness. Asiago cheese is a good substitute for the cheddar since it gives a bit more flavor.
Bacon-Cheddar Cauliflower Chowder - going to try and sub milk with almond milk and nix the flour as thickener and see what I get!
Corn Chowder -just made this. Amazing. Just used 2.5 cups of onions instead of 6 and added some red peppers. Also used fresh grated vermont white cheddar.
