Pastelón (Sweet Plaintain “Lasagna”) - Since this was my first time trying pastelon, I paid attention to people's critique's who are familiar with this dish. They liked it! The recipe calls for 4 plantains but it really needs about 6-8. Also, I would skip the bay leaves next time (or only put one) because I found that flavor to be strong. Pastelon de platanos maduros: Great Puerto Rican dish! You end up basically making your own sofrito, so you won't remotely notice a ground turkey for beef substitution. I get the lasagna analogy, but I don't care for that much cheese.
Pastelon (otherwise known as Puerto Rican Lasagna) by The Noshery...I made this dish after seeing it on Diners, Drive Ins and Dives....it's do die for! Labor intensive but worth the work. I'm dying to try and make it using ground chicken & chicken chorizo since I no longer eat beef. Enjoy!!
Cheesy Biscuit Lasagna | Plain Chicken - I loved everything about this recipe. It is a quick and easy alternative to lasagna. It has all the flavors of lasagna without all the work. You could even call this Calzone Lasagna. The biscuits are like little calzones.
