Pumpkin Butter. MAKE THIS. Seriously. It's the best-tasting vegetable thing you've ever had in your mouth. It's good on everything (in oatmeal, plain yogurt, granola, pancakes, cookies), and it's fat free, gluten free, vegan. I made mine with regular old canned pumpkin, apple cider, local honey, and fresh grated ginger. HEAVEN. Try using it to replace half the butter in your baking recipes! Takes less than half an hour on top of the stove.
