Glazed doughnut cupcakes... made these today as a thank you for the reporter and photographer @The Morning Journal for the great story about 5 Corners Bed & Breakfast. Yummy and not very hard. My 3 year old dumped in extra baking soda and they still came out yummy! Glazed Blueberry Doughnut Muffins: Add lemon juice in the batter and a glaze of powdered sugar, milk and lemon juice. Try to make a gf version.
orange muffins - yummm!! new bakers do NOT get put off by the sour cream: sour cream, buttermilk and Greek yogurt all help to make GREAT muffins! An afterthought: mini semi-sweet chocolate chips would be a great addition to the orange flavor (and kids would love them for breakfast).

Both are sooo soft and tasty :) All sorts of things could be added to this simple batter like oatmeal, bran, flax, nuts, other fruit... Get creative!
