Blueberry Breakfast Cake Serves 6-8 ½ cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 7/8 cup + 1 T. sugar 1 egg, room temperature 1 tsp. vanilla 2 cups flour 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ½ cup buttermilk 1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy. 2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt. 3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries. 4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Chicken Cordon Bleu Casserole - Add 1 c each cubed, cooked chicken and ham to 1 lb cooked pasta. In medium saucepan combine 1 ½ c milk, 8 oz. softened cream cheese, 2 T dried minced onion on medium heat. Cook and stir frequently until smooth. Stir into pasta. Add 2 c shredded Swiss cheese, salt, pepper, cayenne pepper to taste. Preheat broiler. Put pasta mixture in baking dish. Top with 1c Panko crumbs. Pour ½ c melted butter over. Broil until browned.

With the parmesan cheese in ti, the leftoers were thick the next day, so we boiled up some pasta and poured the thickened soup over it. It tasted pretty cose to the Lipton Creamy Tomato Pasta Side, with parmesan.

Mini Pumpkin Pie Croissants- 2 tubes crescent rolls (open and split lengthwise to make more crescents) Beat until fluffy: 4 oz cream cheese, 1 can pumpkin (not pie filling), 2 Tbsp. pumpkin pie spice, 3-4 Tbsp. sugar. Place one large spoonful on each crescent and spread. Roll crescent up and then roll each one in a mixture of 4 Tbsp. sugar and 1 Tsp. pumpkin pie spice. Bake 350 degree F for 15-18 minutes (or until browned)

Each croissant will get a generous tsp of the luscious cream cheese pumpkin pie filling. 4oz. (1/2 block) softened cream cheese 1 cup canned pumpkin 1-2 TSP. Pumpkin Pie spice 3-4 TSP. Sugar Beat above ingredients together until fluffy and creamy. Spread about 1 tsp of filling over each triangle of dough, roll. Mix together 4 TSP and 1 TSP pumpkin pie spice and roll each croissant in it. Bake at 375° for approximately 13-15 minutes or until lightly browned and baked through.

Pumpkin Truffles Pumpkin Cream Cheese Truffles Ingredients: ½ cup white chocolate chunks or chips 2 cups white chocolate almond bark (I think I used around 4-5 cubes) 1/3 cup gingersnap cookie crumbs, plus more for garnish 1/4 cup canned pumpkin purée 1/4 cup graham cracker crumbs, plus more for garnish 1 tablespoon confectioners’ sugar 1/2 teaspoon orange zest 1/8 teaspoon ground cinnamon Pinch of fine salt 2 ounces cream cheese, softened Directions: Melt the 1/2 cup of white chocolate chips in a double boiler over medium-low heat or in the microwave for about 1 minutes. Stir often to keep the chocolate from burning. Transfer to a large bowl. Add gingersnap crumbs, pumpkin, graham cracker crumbs, sugar, zest, cinnamon, salt and cream cheese and beat with an electric mixer until smooth. Transfer to a shallow bowl, cover and chill until just solid enough to roll into balls, about 2 hours. Line a large sheet tray with parchment paper. Melt remaining 2 cups white chocolate almond bark and transfer to a small, deep bowl. Roll 1 heaping teaspoon of the pumpkin mixture into a ball in your hands, then drop into the chocolate. Working quickly, gently spoon chocolate over to coat. Using a small spoon or fork, lift the truffle out of the chocolate, shake off excess and transfer to prepared sheet tray. Dollop a bit of extra chocolate on any parts that remain exposed, then sprinkle a few gingersnap or graham cracker crumbs over the top, if you like. Repeat process with remaining pumpkin mixture and chocolate, then chill truffles until chocolate is completely set, about 1 hour. adapted from Whole Foods

Slow Cooker Breakfast Casserole - 1 bag 26 oz. frozen hash browns, 12 eggs, 1 cup milk, 1 tablespoon ground mustard, 1 16 oz. roll sausage, Salt and pepper 16 oz. bag shredded cheddar cheese. Spray crock pot and evenly spread hash browns at the bottom. Mix eggs in bowl, add milk, ground mustard, salt, pepper, mix, set aside. Cook sausage on high heat, drain and set aside & top on hash browns w/ cheese.Mix it up well. Pour egg mixture over everything & stir. Turn crock pot on low for 6-8 hours.

Lasagna soup...very rich and yummy! I added 3 tsp onion powder with the other spices instead of onions. I blended the tomatoes before adding them ( I couldn't find fire roasted). I used the full 8 cups of chicken stock and added extra noodles approx 12 ounces. I doubled the cheesy mixture since ricotta comes in 15 ounce container and didn't want to waste any of it. Would be great with breadsticks.

Lasagna Soup. Love this recipe. It was not only yummy but easy to make. I even made it in the crock pot. I sauteed the hamburger (instead of sausage), onions, and peppers (recipe didn't call for it but I added them) in a frying pan then added it to the crock pot with the seasonings, diced tomatoes, and chicken stock. I cooked the pasta on the stove and added it to each bowl so I could freeze the left over soup. Will definitely be making this soup again.

Chicken Enchilada Soup - Crock Pot Yummy!!! I will probably add 2 cans of corn instead of 1 and 2 cans of black beans the next time I make it. The spices are perfect!!!! I did add 1 tsp onion powder instead of onions, omitted the oil and skipped precooking the garlic.

Chili's Chicken Enchilada Soup in the Crock Pot : Lindsey's Luscious
Copy cat Chilis Chicken Enchilada Soup Crock Pot Chicken Enchilada Soup 2 tablespoons vegetable oil 2 medium onions, diced 4 cloves garlic, minced 1 quart chicken stock 1 tablespoon chicken soup base 2 teaspoons ground cumin 2 teaspoons chili powder 1/2 teaspoon black pepper 1/4 to 1/2 teaspoon cayenne pepper, to taste 1 (8 oz). can tomato sauce 1 (19 oz.) can enchilada sauce (or two 10 oz. cans) 6 small corn tortillas*, minced 16 oz. Velveeta, cubed 1 cup co-jack cheese, shredded 1 22 oz. bag Tyson roasted and diced chicken, thawed 1 can whole kernel corn**, drained (optional) Garnishes: pico de gallo, sour cream, shredded cheese, crunchy tortilla strips In a skillet, heat the olive oil over medium heat, and saute' the onions until they are tender. Add the minced garlic and cook another minute or two, then scrape the onions and garlic into your crock pot. Add all the other ingredients, except the chicken and corn. Cook over high heat for two hours or low for four. Whisk until smooth (you may wish to use a stick blender). Add the chicken pieces and corn and heat through, maybe another 30 minutes to one hour. Check seasonings, and garnish as you like before serving. *Most of the recipes that I found online called for one or two cups of masa harina to thicken the soup. The store I was shopping in didn't carry that, so I got the brilliant idea to just chop up some corn tortillas and let them dissolve in the soup. it worked perfectly, and gave the soup great flavor...just like chicken enchiladas! **Chili's chicken enchilada soup doesn't have corn in it, but it's delicious in this, amplifying the corny flavor of the tortillas. You could even go crazy and also add a can or two of black beans. That would be yummy, too.
Baked Mozzarella Sticks...mine did not look like this at all! Everyone liked them, but you could only dip one at a time or else the panko crumbs would not stick to them. The panko seasoning was very good. Maybe I will crush the panko crumbs a little further or look at the other cheese stick recipe and check out the breadcrumb/panko mix. But tasted very good!
