No-Bake Pumpkin Oatmeal Cookies: 3/4C quick oats,1/2C oat flour(blend oats in a food processor until they are powder-measure after blending),1/4t salt,1/4t baking soda,1/4C sugar,1/4t cinnamon,1/3C canned pumpkin,2 1/2T milk,1T oil,1/2t vanilla extract. Combine all dry ingredients and stir very well. In a separate bowl, combine all liquid (including pumpkin). Then stir to combine. Put in the fridge to firm up a little before forming cookies. Form into balls or cookies.
