No-fat lemon poppy seed muffins. switch the white flour for wheat, and use 4 egg whites instead of 2 eggs. use unsweetened applesauce in place of the sugar and oil. Adds up to just under 100 cal per muffin, with ZERO fat, and grams of protein =) enjoy!
Much lighter, healthier version of Lemon Poppy Muffins. Used organic whole yogurt as a base, white whole wheat flour, only 1 TBSP of oil, tons of lemon. Under 138 calories and 1 gram of fat per muffin!
