Creamy Burrito Casserole 1 lb ground beef 1/2 medium onion chopped 1 package of taco seasoning 6 large flour tortillas 1 can refried beans 2-3 cups shredded Colby Jack cheese 1 can cream of mushroom soup 4 ounces sour cream a little hot sauce if you want spicy Brown ground meat and onion, drain if necessary. Add taco seasoning and mix in refried beans. Mix sour cream and soup in separate bowl. Spread 1/2 of soup mixture in casserole dish. Tear up 3 tortillas and spread over soup mixture. Put 1/2 of meat mixture over tortillas. Add a layer of cheese and then add hot sauce if you are using it. Repeat layers. Then sprinkle cheese over top and bake uncovered 20-30 minutes at 350 degrees. Definitely make sure you have enough meat for the top layer otherwise your tortillas will get a lot of heat and be extra crunchy. We used 3 cups of cheese because we like things cheesy. We also made the casserole the night before and refrigerated it before cooking it before we ate. I think that worked well but it needed the full 30 minutes to warm up (even after we had let it sit out awhile to try to get to room temperature).

1 T extra virgin olive oil 1lb ground beef 1 onion (chopped) 1 green bell pepper (seeded and chopped) ¼ c A1 steak sauce 1 c beef broth S 4 hamburger buns provolone cheese or slices Brown ground beef, add green pepper & onion 3-4 mins. Drain. Stir in steak sauce & broth, season. Bring to boil & simmer until thick & bubbly. Toast buns, top with mixture & add cheese.

One of my favorite all time veggie side dishes is roasted cauliflower. So YUMMY! I just thaw cauliflower and toss it in a bag with olive oil and minced garlic, shake around, then lay out in a pan and sprinkle with parmesan cheese. Cook high, like at 450 degrees or so, stirring off and on and adding more parmesan if you want. I just watch it until it gets brown. YUM!

Low Fat Baked Onion Rings Crispy and light with no greasy mess. Great as a snack or a perfect side dish to a nice juicy burger! When I was a kid, I loved onion rings with my burger, but never loved that greasy after-taste. Baking them with a blend of Panko, cornflake crumbs and breadcrumbs gives these a fabulous crunch without all the fat. If you can't find cornflake crumbs you can make your own by pulsing corn flakes in the food processor. The best way to bread them so the breading doesn't fall off is to avoid using your fingers, instead use tongs to take them out of the breadcrumbs. Note: I was left with 2/3 of the crumb mixture and 2 cups of the buttermilk after these were done, which I deducted from the nutritional values. Low Fat Baked Onion Rings Adapted from Life as a Lofthouse Gina's Weight Watcher Recipes Servings: 2 • Serving Size: 1/2 • Old Points: 1 pt • Points+: 2 pt Calories: 74.7 • Fat: 0.6 g • Carb: 14.7 g • Fiber: 1.6 g • Sugar: 1.7 g • Protein: 2.9 g 1 medium onion, sliced into 1/4 inch rings 2 1/4 cups low fat buttermilk 1/2 cup panko bread crumbs 1/4 cup Italian seasoned whole wheat bread crumbs 1/4 cup crushed corn flake crumbs salt to taste olive oil baking spray (I used my Misto) Place slices of onion in a shallow dish.
