Vegan Italian frittata. No better Sunday brunch. - I shingle thin potatoes on the bottom of a cast iron pan and place spinach mixture then tofu. Cook on low ish on stove top until tender then broil. Sounds good, I'd do no tofu and cheese so everyone will enjoy!
