best quinoa recipe: Quinoa with Caramelized Onions and Carrots Quinoa with Caramelized Onions and Carrots 1 tablespoon extra virgin olive oil 1 cup chopped onion 2 carrots, chopped 1 cup quinoa 2 cups low sodium vegetable broth 2/3 cup chopped walnuts 1/4 cup chopped fresh parsley Heat the oil over medium-high heat. Cook the onion with a pinch of salt on medium low heat for about 30 minutes- until brown and caramelized. Add carrot and cook for 3 minutes more. Stir in the quinoa and vegetable broth, bring to a boil. Reduce heat and simmer, cover and cook 15 to 20 minutes. Fluff with a fork and stir in the parsley and walnuts. Season to taste. Serve warm or at room temperature.
