Beef and Bean Enchilada Casserole I would change one thing...don't add the tor´tillas on the bottom and serve a side of taco chips or baked tortillas. I like crispy crunchy over a soggy bottom...not that I am sure it would be soggy just guessing is all.
Chicken Enchilada Casserole...I would boil the chicken about an hour. Test for yourself; I would want to make sure it was tender because it will not cook that much more in the casserole. Also, I might cook rice and add for a change. :)
