BROCCOLI WHITE BEAN SOUP 4 cloves of garlic 1 medium onion 1 tbsp extra-virgin olive oil 1 large head of broccoli (approximately 4 cups), washed and cut into florets 1 tsp sea salt 1 tsp black pepper 1/2 tsp paprika 1 can (15 ounces) cannellini beans, rinsed 4 cups low-sodium vegetable broth 2 tbsp fresh rosemary, washed and chopped Optional: parmesan cheese

Creamy White Bean Soup Yield: Serves 4 Ingredients: 1 slice bacon 4 springs thyme, plus extra for garnish 1-2 tablespoons olive oil 1/2 onion (about 1/2 cup), diced 2 cloves garlic, minced 4 cups chicken stock 30oz white beans (canned or softened from dried) kosher salt and freshly ground pepper, to taste Parmesan croutons for garnish

Broccoli Soup 1 bunch fresh broccoli 2 sticks butter 2 cans chicken broth 1 cup flour 4 cups milk salt and pepper to taste Cut the broccoli into bite-size pieces. Steam it in 1/2 cup water until tender. Don’t drain. In a soup pot, melt the butter. Whisk in the flour and cook for a few minutes. Whisk in the broth. Bring to a boil and then lower the heat until it thickens. Add the milk, broccoli, salt and pepper.
