My inspiration for an amazing dinner tonight. Vegan pumpkin mac and cheese. My recipe was similar. All I used was pureed pumpkin and almond milk for the sauce (add in nutmeg, garlic, salt and pepper). I then tossed in some spinach and turkey sausage. Served with whole wheat pasta. Low fat, delicious and complete meal!
Creamy Garlic Parmesan Mushrooms are sautéed in a butter garlic until tender and then tossed in the most AMAZING creamy parmesan sauce. These are great as a side, on top of meat or eaten by themselves and ready in under 10 minutes!
